How do I change (and keep) the variation order?

I own a yarn shop and sell many Items with dozens of Variations. For example, I sell knitting needles in 103 different configurations:

I'm trying to figure out how to change the sort order for all the variations and make that sort order stick. I know how to manually reorder them, but they get reordered somehow, either when a variation is sold or when new variations are added. I can't figure how how the reordering is happening or what's triggering it. Any advice would be much appreciated!
