Here is what happened. I changed my theme two days ago. And thanks to G. I had a though to look at my SEO section in Settings.
All fields were empty! Site title, Meta keywords, Footer, Header, all the rest, all disappeared.
What if I didn't check?
I was sure that when you change the theme, the site migrated to a new theme with all information.
I never saw a warning coming from Weebly that when you change the theme your SEO entries disappear?
It's good I had a site backup copy. So I had to go there, save everything to my word document and them go back to my site and paste everything back again.
Does it have to be that way?

Oh no! I've never heard of this happening, but I'm happy to do some digging to see if this always happens when changing themes.
So sorry for the inconvenience!

This happened to me as well the other day. It deleted my footer and header codes that have my Google Analytics and other information. It didn't take long to log back onto Google Analytics, Webmaster, and others and re-paste the code but it definitly was a little set-back for the day.

Sorry to hear that, @Herseyhailstorm. Did you already re-enter your SEO settings? I checked your site and see that information on your Settings tab.

Hi,
All the information in my Page SEO settings are also missing...but they go missing after I fill them in.
Ie I will type information into the title, description or other boxes available. Then I will exit the Settings. But if I want to return to add more information to the Page SEO settings, it is blank.
However what I found, was I could still place my curser in certain areas, and so I started pressing the backspace button ie deleting any information I had in the boxes (remember, I still can't see anything) and it appears to be deleting something. Then once all the information has been 'deleted' from all the 'boxes', all titles and boxes return.
Ie when the Page SEO setting boxes are blank, they are visable. When the boxes have information typed into them, they become invisable, including the information typed into the boxes.

Do you see the same thing if you log in and edit your site with a different browser, @Open?
