I accidentally charged an item 2 times (I entered 2 quantity not 1). Ii collected the correct amount of cash, but how do I fix my records?

Did you collect CASH or was it a Credit card Transaction?
If you collected it in CASH and manually did the math to correct the error instead of deleting it before pressing Tender, You can just find the Transaction, and hit Refund, find the item you pressed 2 for Quantity, and change it to refund of 1 item. This will get your stock corrected as long as you select return to stock in the pop ups for a return. This will also get your Cash Drawer back since it will show a Refund in hopefully the exact amount you deducted at the time of sale.
