If a brick and mortar retail store has an online store sharing the same inventory, does Square track and update simultaneously since they share the same inventory? It's easier if I don't have to update 2 places when a sale is made.

as long as it is the same item being sold in both stores then yes the inventory does work and remove one each time there is a sale. I believe the only issue is if you have an online return you need to manually add the item back to inventory.

There isn't away to disable online orders, only an option to unpublish your site which seems a bit extreme. However Square POS and the Online Store both share inventory, so if you run out in-store, items on your site will show an OUT OF STOCK message and cannot be ordered.
