How do you collect customer details, including emails?
Other than entering customer information multiple times, is there any way to connect customer information with emails? If a customer shops at a restaurant and gives square their email --- can I get access to that email if the customer shops at my store?

Here is a help article on it. You can add a customer to each sale by clicking on the arrow next to the words NO Sale on the top right of the tablet screen. or by clicking menu and selecting customers. There you can add, edit and select the customer you want. You can search by name, phone, or email.

I know that I can search for a customer in that way. I am seeking a way to get access to existing customer information that my store didn't enter.

If it is not in your customer information section then you don't have access to it. However, you still may be able to send them information via Square Marketing, you just will not be able to direclty view their information. Customer under the "reachable" group are the ones you can market too.
