New POS system in Food Trailer

Hi! I am in the process of starting a food trailer and I am also new to Square. I have been doing some research about POS system options but I'm still unsure on a few things:

I would prefer to have a counter top Square Stand w/ chip reader, cash drawer, and receipt printer, but I'm unsure if I should get wifi on the trailer or not. Would not having wifi effect the setup of the Square POS?

Also, how does payment processing work without wifi? Would the payments be made offline and processed later?

Also, if I wanted to use maybe 4G or LTE through the iPad, would that work with the Square Stand?

Bafranco,  I don't use the square stand but use everything else, Scanner, printer, cash drawer.  I use an iPad with LTE for data and have no problems.  I also run 2 other iPad off of the one.  It is basically just using the data to check the store dashboard and process cards.  This should work with the square stand too.  In my case, we carry the iPad around so I can't be tide down with the stand.

The only issue I can see is if you are using the kitchen printer.  If you use the Impact Kitchen printer it only connects via Ethernet.  So you will want to make sure your Printer you get is wifi.  

If you use Verizon, (others may offer it to)  They have an LTE tower.  This allows your ipads to connect to it via wifi and also has 3 ethernet ports.

To piggyback off of @RHatch's wonderful suggestions, I just wanted to add that you also have the option to use the Bluetooth Receipt Printer in addition to the Verizon LTE tower. Please note that this will only work with the iOS version of POS. Since you have an iPad, you shouldn't have any issues, but just wanted to give a heads up in case anyone else in your crew attempts to pair it with an Android.
