I need to run a credit card that was swiped but I did not write it down. Does square log credit card number, exp. date, cvv numbers?

No, that kind of information is not stored for a transaction, you don't want any random store just having access to everyone's credit card information and can just randomly decide to charge it again.
in the future, there is a way to get the users permission to store a card on file which requires the customer to consent to their card info being saved. https://squareup.com/help/us/en/article/5770-use-card-on-file-with-the-square-point-of-sale-app
