Sales tax

Do I need to add sales tax to my items or just let it add the tax in once i get to shipping? I'm just trying to figure put how to do all the tax stuff so I dont harm myself in the end.

Each item should have the appropriate sales tax turned on in your inventory

How do i know how much percentage to add to each item?
