Email Subjects?

Can I change the subject of the emails that get sent to my customers when they place orders, or when they are sent a shipped notification?  For example, I want my shipped email to say something like "Your Order is Complete!" instead of "Your items have been shipped!"  The reason for this is I use these emails for store pickup notifications, and also for class sign up confirmations.  If I can have it just say that their order has been completed, it will not confuse everyone when they see a shipped notification.
