How can I set up 2 distinct shipping profiles

I have 2 types of products. One product pays a USPS Flat Rate Envelope no matter how much is ordered. There's no other option.

The other product needs to charge shipping by weight. I'd like to use the RTS calculator but it looks like once I do that that customers will be able to choose either of thes options no matter the product.

How can I set up these 2 types of shipping without giving the customer an option?

Will the flat rate option be cheaper than that which RTS calculates? I don't believe you can turn off RTS for some products once you've set up a rate with it, although if it will be more costly than your flat shipping rate I don't think customers would choose it anyway.
