Hi - I’m actually not looking to charge in US currency - I would like to know how to add an item to add a percentage onto the line item. Does that make sense?

Understood @harcottr! You have a couple of options.
You could set up a tax (as a percentage) and you can change the name. To change the name of a tax from the Point of Sale app: tap Settings > Taxes > and tap on Name/the current name to edit.
Or, you could create an item with a variable price for this fee. To create an item with a variable price, leave the price at $0.00. You could then calculate the fee outside of Square and when you select the 'fee' item from the app you'll prompted to enter the amount.

@Helen -- This is exactly what I was looking for. As I do most of my work on my laptop, I noticed that I wasn't able to find this option in the web browser version -- is this the case or am I just not finding the right place?

You can create a tax from your online Dashboard as well:
- Sign into your acccount at Squareup.com/dashboard.
- Click Items from the menu on the left-handside.
- To set up an item with a variable price click Item library > and then click Create Item.
- To set up a tax click Taxes (top right) > and then Create Tax.
- Click Save to save your changes!
