Customers are having a difficult time signing their name, it does not appear or doesn't work even. is there an option to recognize a signature or something to make it less difficult on people?

I'll need some more information to help you. What device are you using? Is the operating system up to date? Is your Square POS app up to date? there shouldn't be any problems with obtaining a signature. Do you have the option selected to skip signature under $25?
