I am trying to figure out why I cannot change my shipping option to Pickup when all of my settings are checked for pickup. Your site is only telling me how to turn it off and on. My pickup address is listed, I went in to settings and fixed the pick up and delivery options. This is just starting to be come a pain, and this happen before when someone wanted to pick up an other I had to go into the store and manually turn off shipping in order for Pickup to work. I click on the CHANGE button to change the shipping option and it says " change option at check out" and usually at the top of the statement you will have the option for pickup ( i have a friend that has your older version and his is simple pickup option is there) but my site does not. I can't even change it as I'm checking out.

Do you want to still offer delivery to your customers? Or just offer Pick-up?
There is a setting if your Online Store to make Pick-up a default option when your customers checkout. Online Store > Settings > Checkout > Advance Settings.
Please let me know if you were looking for something different!
