Thank you for reaching out in the Community!
Being able to sell after 0 inventory is always available in the Point of Sale app. The thought behind it is, we don't want you to miss out on a sale, just in case you haven't had a chance to update your stock.
I would be happy to tag this for our Product Team as a Feature Request because I can see how this would help you business needs.
In the meantime, have you tried using Stock Alerts? The alerts provide you an email whenever it gets to a certain point.

Stock alerts do not help in my use case, as they come once in the day. We sell online, which tracks inventory well and stops sales appropriately, but in the square app I can continue to make sales beyond our inventory.
We have a food trailer and the sales can be fast and furious and it would be great to have an option to stop a sale based on inventory. At least then I can make an assessment what our inventory is and decide a course of action. I do not always have the time to check sales/inventory at squareup.com (nor at the app because there is not a view that shows inventory).
