I'd like to do something where I have a listing where the customer would pay, say, $10 and they would get something I choose that's valued at $10 or more. Like a mystery or surprise. It wouldn't necessarily be the same item each time, just if I had extra of something.
Is there a way to do this?

You could absolutely do this. All you'd need to do is list an item on your site as "Grab Bag" (or whatever you want to call it) for whichever sale price you want it to be.
The only downfall is that you can't have your inventory update for each item listed in the grab bag. You'd need to manually adjust the inventory for each any time you pull from it to use in the grab bag.
