New "Full Count" Inventory - What happens to items without tracking?

I'm looking forward to trying out the new "Full Count" inventory next week in my shop! I do have one question though:  We track stock for certain categories (Books, for example) but not for others (Food and Drinks). What happens to the items that do not have stock tracking turned on if I do not scan them during a full count?  Will tracking be turned on to all of them and reset to zero?  Or does tracking remain turned off?  Thanks for your help if anyone has input!

At this time, Full counts will only build upon your cycle counts and will only affect items that are currently being tracked for stock amounts.
