I’m trying to figure out how to be able to charge people for gasoline by the gallon. Since it’s most often not a whole unit. It may be 5.34 gallons. Or can I work it backwards? So they pumped $15.22 and square calculates how many gallons that was based on price per gallon??? Help!!

This has been an ongoing discussion for over 3 years now.  Here's a link to a thread where this issue has been discussed.  In short, Square doesn't currently have the capacity for selling by anything except whole number quantities, although there are several work arounds in the referenced thread.  Unfortunately for you, I don't think any of them are going to be of much use to you - probably using a Custom Item sale where you manually enter the number of gallons sold in a note to the sale and then enter the total amount of the sale, but that's a cumbersome way of doing it and if you're a busy place, it will probably prove unworkable.
