Hide my online store

I was told that I can hide the store while I'm editing and getting the site ready.  We are having a plant sale starting Oct 4.  I don't want the site visible until then.  I've entered more than 100 plants with descriptions and photos.  I won't be adding pricing until I have the plants and know what sizes we have and how many of each, colors, etc.  I will have 1 week to get our inventory inputted and correct.  I've done all that I can up until now.  The plants will be delivered this weekend and I'll finish up.  I want to be able to test the site before I publish.  Do I have to publish, place an order, then unpublish prior to the 4th?  Right now I can't see any of the items on the website because they aren't priced yet.  I'm feeling pressure to make sure it all works before I push the button on the 4th.  What is the best way to do this?
