Square for Restaurants: How do I set up item variations so I'm prompted to choose one?

I'm using Square for Restaurants. I'm setting up some items with price variations. Two of the items i've setup are requiring me to choose from the price variations and the other 3 are defaulting to the first price. How do I make Square require a price variation on every item? I setup every item the same when I was creating them.

When creating an inventory item, either main or variation, if you leave the price field blank, you can enter the price when the item is rung up.  If you have both an item and a variation for that item, Square will default to the main item and you'll have to manually pick the variation if you want to ring it up instead of the main item.
