We are charging $1 deposits on glass jars on the initial purchase. Once the jars are returned, we'd like to charge back to the customer. How do you do this without issuing a return?

There is not a way to return that $1 without issuing a refund. This would be a feature request.
I recommend you submit a Feature Request here. This will help our product team get visibility and track other Sellers’ interest in your request.
