Real-Time Shipping on Select Items?

Good afternoon! The business I work for is in the process of opening shipping channels up for our online store. We're subscribed to the Premium version of Online for the Real-Time Shipping feature, but I came across a problem when setting up rates and profiles. It appears that RTS is only available as an option for the default profile (meaning you can't have any overlapping states between it and another profile using RTS). But we carry items that have shipping restrictions, and they differ by item, since we are a plant nursery. For instance:

-We can ship wreaths to any state but WI.

-We can ship our houseplants to any states except AZ, CA, HI, ID, NV, OR, UT, WA, AL, AK, AR, CO, KS, MS, MN, NM, ND, OK, SD, TX.

-We can ship retail hard goods anywhere.

Originally I thought to overcome this by creating item-specific profiles, like one for wreaths, one for houseplants, and one for hard goods... but this won't let us use RTS unless I missed something. Any suggestions / things I am missing here? Thanks!
