I am trying to separate 2 large "categories" for reporting purpose. We are a gallery with day-to-day ops, but also put on a very large event every year for artists. The event is managed by a different team, so would be handy to create a parent category for "event" and another for "gallery." Somehow I created the "event" one, but cannot figure out how to backtrack to create the "gallery" one!

As I see this is your first post welcome to the Sellers community forum.
From your Square Dashboard on a computer sign in to your Square Dashboard -- Select Items -- Then Category
You should then see a Create Category in the upper right.
When Creating a New Category it becomes the Parent, if you want the new category to be a Sub Category you would need to select which Parent Category you would like this new category to be a Sub of. See image below. After making changes just remember to save the changes.
