About multiple locations on my account

I'm a bit confused on how locations works. 

Basics on my business-

I knit and have items for sale but some of those items are at a local business. I have a hard time checking to make sure an item hasn't sold locally and hope I won't get a double purchase. So I decided to create another location. So now I have my online shop and a physical shop. 

Problem- 

Typically, I sell more at the local location downtown during the holiday season but sales have gone up online. I'd like to be able to show all the items I have available in my online shop but set the location to be visible to my customers. That way I can tell them that if they can't purchase it online, I'll need to check availability locally but that doesn't mean it's out of stork, if that makes sense. To clarify, if someone sees an item and then clicks on it, it should say contact artist for availability- or something, if I've set it to the local location. If it's set to the online shop they just add it to their cart. 

Any ideas on how to streamline this would be great! If there are other features I can use to accomplish this, please post.
