how do I add shipping charges to an invoice

How do I add a shipping charge to an invoice?  There is no entry to add it ???

I have to put Shipping in as an item in the catalog, and leave it for a variable price. That way, its an added item. 

The online store does it by weight of item but not everyone deals with retail sites.
