HI, not sure if this will work for what you need it for. At the bottom of each category is the Availability, set specific time for a category.

@Goldneye i am unable to affect the categories of SERVICES this way. i can only set this type of guidline for actual items for sale., which makes no sense since it is an appointment function.

Welcome back to the Community. Stepping in to assist @Goldneye with your questions on appointments.
Another option you can try would be to assign the Service to a specific Team Member, so it's tied to their availability. Under Team on your Dashboard, you can create the team member & their availability to whatever is needed for the service.
Please let me know if you have any other questions or this doesn't do the trick.
