Where can I go to change the name of the staff people are booking appointments with?

Go to square appointments dashboard. Click on "Staff". choose the staff member whose name you wish to change.  Scroll down right under the blocks of colors. There, you will find "Display Name"

The Staff colors are so close, why not have pink, purple, red, blue, green, yellow, orange....instead of 3 purple, 3 greens, 3 blues

My understanding is that this is set up like this to help with accessibility. However, I definitely see how this could be easily confused so I recommend you submit a Feature Request here. This will help our product team get visibility and track other Sellers with similar interest in your request.
