What is the square cookie policy?
So to notify our customers of cookies, we must now have our own banner, but to have a banner you should also have a policy... but, how am I to create a policy for cookies I have no control over? could square please provide a cookie policy for all sites explaining what cookies are used for and what cookies are active on the site, therefore we will be able to create banners affectively and lawfully to support our site visitors rights and access to correct information.

Matt,
I read the law that you don’t need to seek permission if you’re using the Square online store. You may need a policy & permission if you put other content in there (such as advertising banners etc.).
Source: https://ico.org.uk/for-organisations/guide-to-pecr/cookies-and-similar-technologies/
ICO. Content
You must tell people if you set cookies, and clearly explain what the cookies do and why. You must also get the user’s consent. Consent must be actively and clearly given.
There is an exception for cookies that are essential to provide an online service at someone’s request (eg to remember what’s in their online basket, or to ensure security in online banking).
The same rules also apply if you use any other type of technology to store or gain access to information on someone’s device.

Yes, but from my understanding when a Facebook pixel is active you must tell the user therefore a policy must be shared, so far I just have https://mjdonline.square.site/cookie-policy

So when you adapt the site & enable external cookies & trackers then it would become your cookie policy - incorporating those of the external tracking companies that you're using.
So then you can use one of the cookie policy generators for how you've adapted the site & add that into the code.
All this said, I'm no lawyer!

Hey Matt, I just want to step in quickly here as well! This shouldn't be construed as legal or data protection advice but I hope this will help clarify it somewhat. If you have any concerns, it's always best to contact a knowledgeable professional advisor. The Information Commissioner's Office (ICO) also has a helpline for small businesses to find out more about GDPR which may be of help:
When you are adding a cookie banner to your site, you may be asked to scan your website and categorise the cookies identified. We've included a list of cookies set on your Square Online site here.
You can also find Square's privacy notice that applies to sellers on our website.
For customers and employees of Square’s sellers, please find the applicable privacy notice here.
I hope that will help.
