I've sent invites to all our staff using Square Team.
How do I tell if they have accepted/setup their accounts?

Hey @Dirky, thanks for your post!
You can check your team members status from your Square Dashboard > Team > Team Members. If the team member has setup their account, their status will be change to Active. If they haven't setup their account, the status will stay at Invited.
