Questions about offline mode.

We're at a BBQ fest this weekend that doesn't have internet. Rather than use up all the data on our phones, could we take our i-pad from the shop and use the offline mode to process these payments at the festival and then re-connect to our internet that evening?

You can but in my opinion that is rather risky. Any payment declined when you connect back to the internet you will be out of and have no way to contact them unless you collect name and phone number etc at time of sale.

Square uses like almost no data at all to work.

Signing in to Square Register ~ 8 kb of data
Declined payments ~ 4 kb of data
Completed payments ~ 10 kb of data
Issuing a refund ~ 4 kb of data
Resending a receipt ~ 4 kb of data

All that done twenty times is less than looking at this web page.

So so I would highly recommend you do not go into offline mode and simply use a tiny bit of data.
