If you leave the price of an item blank, it will automatically set as a "variable priced item". Meaning you can put in whatever price you want for that item every time. We use that feature for items that are sold by weight.
Or you can setup variants of a single item (as many as you like) where each one can have its own price, but it will ring up as the same item.
