You can just turn off Sales tax per sale by clicking the tax in the cart and removing it. or you can permanently turn off sales tax when you leave for a trade show and then reneable it when you get back, but that is complicated if it is only some items that you are picking out of a lot of items. the easiest is just to remove the sales tax at the time of sale.
