How do you set up a payment plan in the invoices? Like with mulitple dates and specific amounts for the cusotmer to pay?

I don't think you can do something like that unless you would set up recurring invoices for the payment amount.
Square could offer your customer Installment plans thru Square where you get your money now and they make payments to Square. https://squareup.com/us/en/installments
