How do I change the "variation name" on mass stock items and not each one by one?

Each item in our inventory system has a variation name of "regular" and I want to eliminate that but not have to go into each item.  Is there a way to change that for everything without having to edit each individial stock item?

The best way to edit large amounts of items is to import your item list. This will allow you to change whatever information you need to in a spreadsheet and then upload to Square. You'll find more information here https://squareup.com/help/us/en/article/5153
