Yes, you can remove the shipping policy from displaying, however, the only way to do this is to also toggle off the item description. 😕
This may leave you in a not great spot as far as deciding whether or not to keep it, and I apologize if there's any inconvenience.
To toggle it off, open the site editor, and select one of your item pages from the dropdown in the top left corner of the editor. Click on the item area, then toggle off "description".
You only need to perform this action on once item, then it will apply to all of your items.
