@Gregorio If you're new to Square the option to skip the signature screen for all payments is turned on by default.
But if you'd like customers to provide a signature for payments over $25 you can adjust this setting from the Point of Sale app:
- Tap the three horizontal lines in the top left.
- Tap Settings > then tap Signature & Receipt.
- Select the option to Collect Signature Over $25.
- Tap the back arrow in the upper left to return to the Settings section.

I see the under $25 option, but I just did my first transaction for $50 and realized I didn't get a signature but the invoice or swipe still charged and I emailed a receipt to the buyer.
