I’ve listed numerous items on my website for sale but would now like to add a size variant for each item, S,M,L,XL, etc. Is there a way this can be done to all items at the same time rather that going through each one by one.

At the moment, adding variations/options isn't one of the action available for bulk edit. You'd need to create variations for individual item.
You can consider making changes using a CSV file and upload items in bulk to save time. Items are sync between Square and the Square Online site so any changes you made on Square will be reflected on your website.
