What happens when I scan the card? Where does the payment go? How do I access the funds?

When you process a charged/debited sale, Square hold those funds (minus the fee they take out) in your deposit account. What happens next depends on whether you have a Square Card or not. If you have the Card, those funds are immediately available to be used via the Card. If you don't have a Card, Square will deposit your funds into your linked bank account within the next 1-2 business days. Finally, if you don't have the Card, you can request an Instant Deposit, which will cause a transfer immediately to your bank account, at the cost of another 1% of the amount transferred.

I have a square debit card yet I still show a zero balance in my account

Are you seeing a zero balance on your Square Dashboard or under the Square Card portion? Whenever you have your Square Card activated, any available funds will be available there instead of your normal balance.
