Invoices sent with a request for address, but nothing saved?
I sent a request for their mailing address with the invoices, but when the customers paid the invoice with the address they typed, it did not save in my customer list.

I do not believe invoices would work that way. You would need to be the one to add the customer info to the customers list.
@ACAcatering, since you have the experience with invoices, what process should be done for customer information acquisition? Will a customer adding info populate to the customers list or does the Square account need to be the one to add the info?

I can not say 100% as I don't ship, but I do not believe those are linked. I believe it is meant for shipping purposes only. In my mind, I imagine that not making that link saves Square a lot of headaches. Can you imagine what would happen when people figured out how a business obtained their address for mailers?

ACACatering's reply is correct, when a customer enters their shipping address when paying an invoice their shipping address is not automatically added to their Customer Profile.
However, the customer's shipping address will appear on the invoice itself - just below the customer's name (click on an invoice to view more details):
Keep in mind when you request shipping on an invoice it's not a required field - so a customer could pay the invoice and forget to enter their shipping address.
