When someone has multiple e gift cards, at check out does the total pull from all their gift cards?

My client has multiple gift cards on file so we punched number in for her $20 gift card and it said it paid for her whole total of $215.  Does that mean it is "pulling" from her other gift cards on file? How do we know, as business owners, when the gift cards are all used up? I have not been able to get an answer on this and I find its difficult, as a biz owner, to keep track of this.
