Any idea why a report from a sales period would be different on the mobile app compared to the desktop version?

I would guess that this comes down to filters not being applied the same on both devices or a sync delay with one of them. When you can, please check the following:
Check if your mobile device and desktop are both syncing with the same Square account. If there's a delay in data synchronisation, it can result in discrepancies (also check that you're running the latest version of the Square app).
Verify that the settings and filters applied to the reports on the mobile app and desktop are the same. Different filter settings can lead to different data views.
