Open pricing

Our non-profit is hosting a holiday fair where we need to keep track of the total sales for each of the 20+ vendors.  There are too many indiviual items to enter them all, so how can I set up a button with an open amount for each vendor?  For example, this customer buys a $5 items from vendor 1, $10 from Vender 2 and $3 from vendor three.  We need to right this all up as a single sale.

I would recommend setting up 20 items with variable pricing, 1 for each vendor. That way you can run a report and see totals for each item and therefore each vendor.
