You should be able to pull the "inventory by category report" for that date. It doesn't add the total inventory, but once I downloaded it I just added another line and totaled the column.
I did run into a few issues with my cost of goods not entered when items were received and I had to go back and edit a few things. I had only switched to square for retail less than a year ago and I don't turn all of my inventory that quickly.
