Can I use the square for orders only, not payment

I would like the customer to mail me the check so I would like this to be used for ordering only.

Yes.  You can run any transaction thru square and at checkout simply choose Cash, Check, or other as the payment.  it will be up to you to make sure that you receive payment as it will appear paid in Square Register as soon as you cash the ticket out.
