Great and hard question @ElisabethB !

 

I've been watching The Chef Show and Chef's Table on Netflix, and literally everyone on there are the most awe inspiring folks in food that I think have ever lived. The care, thought, art, science, passion, that they all have and show in their food and presentation are incredible. Highly recommended watching and adding all of their places to the list!

I do not work in food but love David Chang, Christina Tosi, and Samin Nosrat (and love salt as much as she does) recently quoted in Food and Wine as saying “I feel paranoid when I’m in a kitchen without Maldon,” - which I order in a gallon bucket to have a constant supply.

In the industry today? Not particularly. I am though inspired by mainly 2 people whom I can never walk into a kitchen and NOT think about them. The first being my maternal grandmother, who could cook ANYTHING and always had something on the stove or in the oven. The other is my mentor, Marty- who taught me to always work at 120% (as 100% was rarely good enough). He taught me "how" to do business, how to stay on top and how to treat employees with the honor, respect and dignity which they deserve... but, that everyone is replaceable.

Thats so beautiful to hear. My maternal grandmother was the same! I now have so may of her recipes that make her memory live on. No one can duplicate her buttertarts as hard as we try though

I think that recently there hasn't been anybody who I'm like, "Oh my goodness! I love them and everything they do!" except for friends and peers that I've gotten a chance to work with and gotten to know over the years.

 

Too often the people that I admired (without getting to know) turned out to be such jerks when I did finally meet them. Or you hear terrible stories of abuse from the staff in their kitchens/restaurants.

 

Like, do I watch Chef's Table and think it's interesting? Yes. But do I get more inspired by a client coming in and recounting how their grandmother used to make this thing with cherries and almonds and they can't find it anywhere, but the loved it so much. Definitely yes.

 

So...there's that. I think I'm more inspired by my customers, the seasons, what produce looks really good, my own food experiences and travels, my childhood than a person or persons in particular.

 

It's why we don't have a menu. I make what I want when I want to and I couldn't imagine it any other way!

Personally, I look to other longtime successful Restaurants and Food Trucks for help and inspiration.  That being said, I love to watch shows about foods related to mine but sold in other areas of the Country and The World (we are a Mexican Food Truck and Brick and Mortar).  We will call or travel to visit these locations and usually the business owners and managers are happy to speak with you talk about their successes and processes.  It makes for great vacations and travel, and you will find that niche products that people love.  We are in WV, selling Michoacan Style Mexican Food.  We have been Rated the Best Restaurant and Best Food Truck in the County (2 years in a row).  That's where the inspiration to keep going comes in.
