how do we specify the connected seller account for the direct payments with application fees?

We've been using Stripe. Their documentation is so much easier to follow. We had a client asking about Square integration though, so we're exploring it. We need to have our clients connect so they can sell on our web platform, we take an application fee, and pass the primary charge along to the client. We also need to allow them to process their refunds through our system from their connected accounts. Any direction would be appreciated at this point. We're almost there but this one piece of the puzzle is being elusive.
