this question is aimed at Weebly Staff but feel free to join in!
Given that Etsy and now Ebay are moving to Adyen as its main payment processor - will Weebly do the same for obvious advantages?

That would be an interesting addition to our checkout providers, @mikeg. I don't know if it's something we're looking at adding, though you could post that to the Vote on Features board if you have a moment.
