I know how to go into Settings > SEO > Header to set an og:image thumbnail for my entire site, and I know how to go into a specific page's SEO header settings to set a thumbnail. But I cannot for the life of me figure out how to not let Settings > SEO > Header override when I want a different thumbnail for a specific page. The only other way I have figure this out is to not set Settings > SEO > Header and set each and every individual page as the main thumbnail, and the page I want with a different thumbnail to set that. That is a colossal waste of time.
Is there a way to set a default thumbnail that is overridden when I want it to be for a specific page?

I don't think there's really a way to have it work that way without doing each individual page instead, since whatever you have in Settings > SEO > Header Code will be added first before any individual page's header code field.
