store hours keep resetting on my website

Every week the store hours designated on my website as well as the hours I have designated for shop by appointment only reset. For example, I currently have Mondays designated for shopping my appointment only. And, I am open Tues-Sat for to the public. Every Sunday the hours reverse -  my website shows that I am only open on Monday and all other days are eligible to book an appointment. I am not sure what I am doing something wrong, but it's very frustrating. Any help is greatly appreciated.

It sounds like you've been making a one-time change to your appointment availability, rather than editing your recurring schedule. If you set custom availability for specific days by making a one-time change, it will override your business and staff hours for the days selected. I've included screenshots below of what both of these screens look like, to provide some extra clarity here:
