The added steps to get to categories to add an item is crazy
You used to be able to just click the category drop down, select (or type in) your category and click the one you wanted and you would be could see all items within that category, or add/edit an item in that category.
Now you have to hit the category button, which then opens a side bar - then you have to go to the search bar and type in tour category, then select from drop down , then select apply. Which is a lot of added steps, so instead of making entering items easy, it is now harder AND it doesn’t automatically select that category for that item to go into - you have to select your category again, then select apply and it you miss the apply button it doesn’t go into the designated you selected. It used to be where once you were in that category, everything you did automatically kept you in that category.
So now we have items that are without categories because that last step gets missed. In top of that to go to a new category, you have to select the category drop down again, which pulls up the side bar and select reset, the apply - THEN you have to do the process all over again to select a new category.
Adding these extra steps is just frustrating when if at adds hours of labor time and makes it easier to skip a step, which means possibly more errors in your reporting or not categorizing your items correctly.
Please fix this!

Do you have a Video or Screen shots of this? Which Device are you using to add new items?
Just asking because I just tried this on my Square Dashboard on a computer.
I entered Test Item, Scrolled to Category, Selected Category, Then instead of searching scrolling etc, I started to Typed in a Categoy. Got a few results and selected one then was able to continue creating the item.
