SEO Page Description

Am getting very confused in the SEO page description field. 

Is this a blurb about my store or should I be using the <title> ect HTML coding in this field?

I have set up my SEO page description, worded as I want it. All good. But when I do a google search for my business, it is not what I've entered on my Square site. It is random words from my page but not the description I entered. Why is that?
